Easter Bunny Pancakes


I remember Falak being super excited around Easter, her school in Lucknow used to sell these super amazing sweet filled Easter eggs and she used to get them home. They used to come in all sizes and colors. Since then Easter means a lot of memories. Since Zefan became a toddler, I made these amazing pancakes which always bring a big smile on my little one’s face. Our Easter mornings start with some yummy Bunny Pancakes for breakfast.  I love making these colorful pancakes as an Easter morning surprise.  Actually, you don't need a special occasion to make fun pancakes.  Just get out the food coloring and a few plastic Squirt bottles and you're ready to roll.

These Bunny Pancakes are perfect for Easter brunch or Easter breakfast.  Give it a try!  Be sure to try some other fun things, like flowers, birds, even lacy designs.

What you need to make 4-5 medium sized pancakes:
  • Griddle or large skillet
  • Cooking Oil
  • Large mixing bowl
  • Water 3/4th Cup
  • Pancake Mix 1 Cup
  • Electric mixer (You could even do it with hand, the old-fashioned way)
  • Two Squirt Bottles
  • Food Coloring Few Drops
  • Candy (chocolate chips, Gems or M&Ms)
  • Measuring Cup

In a large bowl mix 1 cup of pancake batter with ¾ cup of water. The batter should be thick enough to “draw” with, but not too thick where it won’t squeeze out of the squirt bottle. Stir until it's well blended-remember NO LUMPS. 

Pour 1/3 cup of batter into one of the squirt bottles. This will be your white color. Put 5-7 drops of red food coloring into the batter that you have kept aside and stir with a spoon until the batter is pink. Pour the pink batter slowly into the other squirt bottle. Apply oil on your griddle. DO NOT TURN YOUR GRIDDLE ON YET.

  • Step 1: Draw a circle with the pink batter in the pan/griddle. 
  • Step 2: Draw bunny ears with the pink batter. 
  • Step 3: Using the white batter, draw the inside of the ears and the mouth area. 

  • Step 4: Turn on your griddle on mid flame and let the outlines cook. Wait until they seemed puffed up before continuing. These cooked outlines keep the batter from spreading out so that the shape stays in place. 
  • Step 5: Fill in the bunny with the pink batter as shown in the photo. 
  • Step 6: Using the white batter now, fill in the remaining outlines as shown in the photo. Wait to flip the bunny until the batter is bubbly and looks mostly cooked.
Decorate your bunny pancakes with chocolate chip eyes and Gems or M&M's for little noses. You can let your kids have fun with this part. They might even want to try different candy colors for noses or raisins for eyes.
